今天嘗試拉心形幾乎成功了,只是最後功虧一簣還要跌了一滴在上面。

一直為了兩個關鍵問題頭痛:1. 奶泡打得不夠綿密;2. 咖啡質素未如理想。終於在上海街挑了一個合眼緣的不綉鋼壺充當奶壺,又因為證實買錯了磨豆機,略施少少「旁門左道」,總算都「解決」了。

雖然沖出來的Espresso不能算出色,但是用來沖Latte已經足夠,至少幾乎可以喝到咖啡豆原來的味道,回復到舊機的最好水平。不用擔心味道,就可以專心試「玩」拉花。

目標只是能夠水準穩定地拉出漂亮的心形、樹葉形,和一杯及格的macchiatto,希望半年內可以完成前兩項。畢竟不是professional,只是在家喝咖啡順便玩玩,不要正式跟人學習,不要太刻意參考什麼的,添置什麼專業器材,過程才是最好玩。

  • I can see that the microfoam is nicely done! Just back from the US - glad to discover a really good cafe in san francisco! went there twice - too bad i just found out (after getting back) there's a secret line to enjoy espresso pulled out from a lever machine :(
  • What do you mean by "a secret line"?
    There's a guy called David Schomer who runs a cafe called Espresso Vivace. If I have a chance to go to Seattle, I'll try their espresso.

    So there are 2 lines outside the shop but I didn't know they serve different coffee! (the "secret line" being at a corridor which is a bit inconspicuous)

    This Espresso Vivace seems interesting! I still haven't been to Seattle yet - perhaps I should go next time =)

    The milk foam I make is still not fine enough. It's always the most critical issue.
